We will offer sit-down service throughout the day offering our entire 2Go menu & our full beer & wine list.

Salumi Bar

A Unique Experience for Los Angeles in the MOZZA Scuola di Pizza

Introducing ‘Salumi Bar’ in the Mozza Scuola di Pizza where we offer our guests an entirely house made a la carte menu of assorted salumi, sausages, patés, terrines, pickles, breads, two entrées from our grill & several well-known contorni (vegetables that are served nightly at the other two Mozzas), along our Bastianich wines by the cuartino or medio litro.  

Salumi slicing and food preparation takes place directly in the Scuola’s open kitchen where Chef Chad Colby and the Mozza chef team will be available to chat about all things salumi. Doors to the Scuola open at 6pm with the last guest being served at 10pm. No reservations required.

MOZZA SCUOLA HOUSE MADE SALUMI FACTS

We are the ONLY restaurant in Los Angeles to be approved to dry cure Salumi in-house and serve it to the public. The Mozza Scuola is equip with a dry cure room designed to be specifically held at 55 F with constant humidity control. 

Our Salumi is made from sustainably raised heritage breeds of pork. Chef Colby butchers and utilizes an entire hog every two weeks. Most cuts being used for our popular “Whole Hog” Family-Style Dinners on Saturday with the rest of the animal being used for our Salumi making.
